On Wednesday June 28th we celebrated our monthly themed Fine Dining Event. June’s theme was the sunny “Caribbean”! The Residents enjoyed getting dressed up in their florals and bright colors while they enjoyed a Caribbean influenced 3 course meal provided by the talented Royal Brock kitchen staff. The flavors of the meal Merengued on the tongues of our residents! They were the perfect combinations of sweet, spicy, tangy and light.
APPETIZER- Lime Cilantro Tajin Shrimp on Guacamole
ENTREE: Choice of, Roasted Achiote Chicken Supreme OR Baked Red Snapper with Mango Salsa. Roasted Yukon Gold Potatoes, Baked Butternut Squash and Green Zucchini.
Dessert: Coconut Cream Pie
The fun didn’t stop after dinner! OH NO!! After their pallets danced because of the meal it was time to put their feet to work! The talented Ron Edgeley provided the entertainment and kept everyone up dancing way into the evening. They laughed, giggled danced and teased with one another and even included the staff!
