Aurora Evenings at The Royal Suites – November Fine Dining

At The Royal Suites, our monthly fine dining evenings are more than a meal—they’re an experience. This November, tenants were treated to a stunning culinary celebration inspired by the enchanting Aurora Borealis. With elegant décor, warm company, and a perfectly crafted menu, the night captured the beauty and mystery of the Northern Lights.

A Taste of the Northern Sky

Chef prepared an unforgettable dining experience, bringing together fresh ingredients, refined techniques, and a touch of northern magic.

Appetizer

Fresh Bruschetta on Homemade Bread with Goat Cheese
Finely diced tomatoes blended with red onions, garlic, and olive oil, served atop slices of freshly baked homemade bread. Each piece was sprinkled with tangy goat cheese and finished with a drizzle of balsamic reduction—vibrant, fresh, and full of flavour.

 Entrees

Tenants enjoyed their choice of two beautifully prepared entrées:

Chicken Madeira
A tender 5oz Chicken Supreme, seared to perfection and braised in a luxurious Madeira wine sauce with sautéed mushrooms and onions. Finished with parmesan cheese and Italian parsley, this dish quickly became a standout favourite.

Or

Lamb Moussaka
Roasted eggplant slices layered with seasoned ground lamb and topped with a velvety béchamel sauce. Rich, aromatic, and comforting—every bite transported diners to the Mediterranean.

 Accompaniments

Green Bean Almandine
A classic French side of crisp green beans tossed with garlic, fresh lemon juice, and toasted almonds for a bright, flavourful finish.

Whipped Yukon Gold Potatoes
Smooth, buttery, and irresistibly creamy—prepared with Yukon Gold potatoes whipped with 35% cream and butter.

Dessert

Hello Dolly Bars
A nostalgic favourite: layered bars filled with chocolate chips, coconut, and chopped nuts. Chewy, sweet, and perfectly indulgent.

An Evening of Music & Ambience

After dinner, the atmosphere was elevated even further with live entertainment by Barry Yuen & Trio. Their rich, soulful sound added warmth to the evening and created a relaxed, enjoyable ambiance that had tenants smiling and tapping along.
