There’s nothing quite like Fine Dining night at The Royal Suites, and this month’s “Grease Lightning” themed evening had everyone ready to hand jive the night away! From the moment residents entered the dining room, they were transported straight back to the fabulous 1950s. Vintage records hanging from the ceiling, handmade sundaes decorating the tables, and authentic jukeboxes created the perfect nostalgic atmosphere.

The excitement was contagious as residents and staff embraced the fun-filled theme together. Laughter, singing, dancing, and smiles filled the room all evening long. One of the highlights of the night was the incredible entertainment by Dan Champaign, whose energy and talent had everyone on their feet dancing and celebrating. Watching residents and staff dancing together truly captured what makes Fine Dining nights at The Royal Suites so special — community, joy, and unforgettable memories.

The delicious menu perfectly matched the retro vibe of the evening. Guests were treated to an incredible selection of dishes, beginning with a seafood salad appetizer served with house-made tortilla chips. The appetizer featured surimi crab and shrimp with diced red onion, peppers, and celery in a light lemon and lime creamy dressing.

For the entrée course, guests enjoyed a choice of:

• Puff Pastry Steak and Mushroom Pie — slow-cooked diced chuck roast beef in a rich sauce with mushrooms, carrots, celery, onions, and garlic wrapped in flaky puff pastry.
• 5 Cheese Baked Mac and Cheese — creamy baked macaroni featuring cheddar, Swiss, parmesan, mozzarella, and cream cheese.

The accompaniments included:

• Roasted Fingerling Potatoes seasoned with thyme, garlic, salt, and pepper
• Steamed Parsnips

To finish the evening on a sweet note, dessert featured a delicious Ambrosia Dessert made with mandarin oranges, pineapple, marshmallows, coconut, and whipped cream.
